If I have some very ripe bananas at home, I know what to do.....
This banana coffee cake is very easy to make and it so good!
Ingredients:
- 45ml coconut oil
- 40g white sugar
- 20g coconut sugar or brown sugar
- 285g bananas
- 2 tsp vanilla extract
- 260g flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp flax seeds
- 1,5 tsp cinnamon
- 50ml plantbased milk
crumble (optional):
- 60g butter
- 70g flour
- 40g coconut sugar or brown sugar
- 30g white sugar
- 1 tsp cinnamon
- 2 hands full of pecans or walnuts (optional)
Recipe:
1: Preheat the oven to 170℃.
2: Make a flax egg by mixing 1 tbsp flaxseeds and 3 tbsp water and set aside so
2: Melt the coconut oil in the microwave and mash the bananas. Add the coconut oil with the mashed bananas, white sugar, brown sugar and vanilla extract into a bowl and mix it together.
3: Add the flour, baking soda, baking powder and cinnamon in a bowl and mix it all together.
4: Add the flour mixture, plant based milk and the flax egg to the mashed banana mixture and stir until while combined, but try not to overmix.
5: Make the crumble topping by mixing the butter, flour, brown sugar, white sugar and cinnamon together until you have a crumbly mixture.
5: Grease a 25x20 (cm) baking pan or use parchement paper and pour the mixture in.
6: Sprinkle the crumble mixture on top.
(If your're using nuts, cut them into smaller pieces and sprinkle them over the cake)
7: Bake the cake for 45 - 60 minutes, until a knife or toothpick comes out clean.
8: Let it down for 20 minutes and you're ready to eat!
