These are the perfect chocolate chip cookies that are chewy and crispy. Personally my favorite cookie!
Ingredients:
- 180g flour
- 50g white sugar
- 65g light brown sugar
- 1tsp baking powder
- 1,5 tsp baking soda
- 1,5 tsp corn starch (this will make them extra chewy!)
- 2 tbsp ground flax seeds
- 60g chocolate or chocolate chips (or more)
- 120g butter
- 1 tsp vanilla extract
Recipe:
1: Melt the butter in a pan on a low pit.
After the butter is melted, let it simmer for about 8 minutes until it has a little bit of a light brown color.
2: Let the butter cool down and mix the flour, baking powder, baking soda and corn strach in a bowl.
3: Make 2 flax eggs by mixing the ground flax seeds and 6 tbsp of water and let it set for 5 minutes.
4: Mix the white sugar, brown sugar, vanilla extract, melted butter and the flax eggs in a seperate bowl.
5: Add in the flour mixture by sieving it.
6: Mix it all together and fold in the chocolate or chocolate chips.
7: Form the dough into a ball and leave it in the refrigerator for 90 minutes.
8: Line a baking tray with parcement paper and roll the dough into 16 balls. (depending on how big you want the cookies.)
9: Place them on the baking tray and bake them for 8-10 minutes at 180 degrees. ( It's really important not to bake them for too long. Take them out when they are still a little soft and starting to turn brown, this is the key for a chewy cookie)
10: Let them cool down for 15 minutes.
