I've been obsessed with dates recently! Combining these with some of my other favorite foods as a snack makes it even better!
Ingredients:
Base:
- 70g oats (I'd recommend using almonds, cashews or both)
- 40g nuts
- 1,5 tbsp maple syrup
- 1 big tbsp coconut oil
- 2,5 tbsp coconut flakes
Date layer:
- 150g medjool dates (used soft soaked dates!)
- 50ml almond milk
- 2 tbsps nut butter
Topping:
50g dark chocolate
Recipe:
Base:
Blend the oats and nuts in a food processor or blender until you have a flour mix.
Melt the coconut oil and add it in a bowl with all the other ingredients and knead it all together.
If you think the dough is too wet add some more blended oats. If it's too dry add some more almond milk.
Line a baking sheet with parcement paper, then transfer the dough, divide equally and press it down.
Date layer:
Blend the dates and almond milk in a food processor until it's smooth.
If you have trouble mixing the dates, add more almond milk.
Add the peanut butter and mix it all together.
Transfer the date layer on top of the base and divide equally with a spoon.
Melt the chocolate and add it on the date layer, make sure you divide this equally too.
Put the raw vegan slices in the freezer for 45 minutes.
Take them out the freezer and let it set for about 20 minutes.
